I used my Pampered Chef "Magic Pot" to cook a rotisserie chicken in the microwave. However, just cook the chicken however you would like. I seasoned mine with salt, pepper, a touch of basil and a dash of oregano.
Shred the chicken up, add as much cheese as you like. I chose ricotta and fresh grated Parmesan, mix well.
NOW....Although I am really expanding my cooking abilities, I have NOT made ravioli dough from scratch. One of my sweet friends gave me the idea to use Won Ton wraps!
Fill the Won Ton Wraps with the mixture, coat the edges with a dab of water and then place a second wrapper on top and seal the edges. You can keep them as large squares, or cut them down. I kept some large for Jasper and I cut the others into smaller circles!
NOW....The Marinara Recipe
- 2 (14.5 ounce) cans stewed tomatoes (I used ones with basil, oregano and garlic mixed in)
- 1 (6 ounce) can tomato paste
- 3 TBSP chopped fresh parsley
- 2 garlic cloves, minced
- 1 1/2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp ground black pepper
- 6 TBSP olive oil(don't think you are Rachel Ray and not measure or you could use too much..lesson learned):)
- 1/3 cup finely diced onion
- 1/2 cup white wine (I used cooking wine so I wouldn't be tempted to drink it instead of cook with it)bahahahaha. Totally kidding, but I really did use cooking wine! Any dry white will work though.
- In a food processor blend tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt and pepper until smooth.
- In a large skillet over medium heat saute the onion in olive oil for 2-3 minutes. Add the blended sauce and white wine.
- Simmer for 30 minutes, stirring occasionally and it's that simple!

YUM-YUM and YUM!! This recipe is a must try! Seriously, so yummy and worth all of the work! I love nothing more than cooking for my family and knowing that the food they are eating was made with love!:))
