I found an amazing recipe on this blog! I had to try it....Around here we love QUICK meals that can cook in a crock pot all day! I think I love using the crock pot so much because it just makes our house feel like a home when the aroma of yummy food cooking fills the house! Well, that and it masks the smell of dirty diapers HA! So anyways here it is.....(Note, it may vary a tad from the original)
Ranch House Crock Pot Pork Chops with Garlic Mashed Potatoes
6 pork chops 1/2 inch thick
1 packet dry ranch dressing seasoning
10 oz can cream of chicken soup
Place all 3 ingredients in crock pot and cook on high heat for 4 hours or low for 6. I cooked it closer to 7 or 8 hours on low and it was AMAZING!! One of our new FAVORITES for sure!
Garlic Mashed Potatoes
4 lbs peeled, cubed potatoes
5 tbsp real butter
1 cup fresh grated Parmesan cheese
6 cloves roasted garlic(To roast garlic preheat oven to 350, place bulb of garlic with skins on in foil and wrap tightly. Bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in bowl and mash with a fork until completely mashed.)
1 cup warm skim milk
1 tbsp salt
pepper to taste.
Cook potatoes until fork tender. Drain and transfer to electric mixer. Mix on low until potatoes are mashed. Add butter, Parmesan, garlic, milk, salt and pepper.
We served the pork chops right on top of the potatoes drizzled (or bathed;)) in the sauce from the crock pot, and stir fried vegetables! YUMMY!:)) Can't wait to make this again!
